Here’s a basic recipe for making delicious spring rolls:
Ingredients:
- Spring roll wrappers (usually found in the freezer section of Asian grocery stores)
- Cooked and cooled vermicelli rice noodles
- Thinly sliced vegetables (e.g., carrots, cucumbers, bell peppers)
- Cooked and cooled protein (e.g., shrimp, chicken, tofu)
- Fresh herbs (e.g., cilantro, mint, basil)
- Lettuce leaves
- Soy sauce or hoisin sauce for dipping
- Cooking oil for frying (if making fried spring rolls)
Instructions:
- Prepare your filling ingredients: Slice the vegetables, cook the protein if it’s not already cooked, and set aside all your ingredients. Make sure everything is cool before rolling.
- Soften the spring roll wrappers: Fill a large shallow dish with warm water. Dip one spring roll wrapper into the water for a few seconds until it softens. Lay it flat on a clean, damp kitchen towel or a plate.
- Assemble the spring rolls: Start by placing a lettuce leaf on the softened wrapper, leaving about an inch of space on each side. Add a small amount of vermicelli noodles, sliced vegetables, protein, and fresh herbs on top of the lettuce.
- Roll up the spring roll: Fold the sides of the wrapper over the filling, then fold the bottom over the filling. Roll it up tightly, similar to rolling a burrito.
- Repeat: Continue assembling and rolling until you’ve used up all your filling ingredients.
- Serve: Serve the spring rolls with soy sauce or hoisin sauce for dipping.
If you prefer fried spring rolls:
- Heat oil in a deep skillet or pot to 350-375°F (175-190°C).
- Gently place the spring rolls into the hot oil and fry until they’re golden brown and crispy, about 2-3 minutes.
- Remove and drain on paper towels.
- Serve your fried spring rolls with dipping sauce.
